Lamb Kofte with Mint Raita

The BBQ gives great colour and flavour to the dish, but the kofte will work just as well cooked under the grill or in a lightly oiled frying pan
Shopping List
• 250g lean lamb mince
• ½ small onion, roughly chopped
• ½ teaspoon ground cumin
• ¼ teaspoon ground coriander
• ½ tablespoon cornflour
• 1 teaspoon mint sauce
• pinch salt
• small handful fresh coriander, roughly chopped
Raita:
• ¼ cucumber, peeled, deseeded and finely cubed
• 250g Greek yoghurt
• 2 tbsp fresh mint, chopped
• 2 tspn mint sauce
• salt and pepper

Place 16 - 20 small kebab sticks into water to soak. Pour the water into the BBQ grill and preheat on setting 12.

Put all the other ingredients, apart from the fresh coriander, into a food processor and blend to finely chop and combine. Add the fresh coriander and blend for a few more seconds.

Firmly press the meat onto the kebab sticks. Cook the kofte on the BBQ grill for 10 to 15 minutes, turning once during this time.

Meanwhile, in a separate bowl, mix together the ingredients for the raita and season with salt and pepper to taste.

Serve the kofte immediately accompanied by the raita.
