• 16 closed cup mushrooms
• 1 red pepper, deseeded and cut into cubes
• 1 yellow pepper, deseeded and cut into cubes
Marinade:
• 4 tbspns olive oil
• 2 tbspns flat leaf parsley, chopped
• 1 clove garlic, crushed
• ½ tspn paprika
• ½ tspn ground cumin
• ½ tspn ground coriander
• zest and juice of 1 lemon
• salt and freshly ground black pepper
Preparation Time
Preparation time: 15 mins (& marinade)
Cooking time: 15 minutes
Difficulty: Easy
Cooking Instructions
1 Combine all the ingredients for the marinade in a medium sized bowl and mix well together. Add in the chicken pieces and stir well to coat them with the marinade. Leave for 1 hour, or overnight if possible, to allow the flavours to develop.
2 Preheat the Fan Grill to 240ºC.
3 Assemble the kebabs by pushing a mushroom to the end of the skewer followed by a piece of yellow pepper, a piece of chicken, a piece of red pepper and another mushroom. Repeat until the skewer is full.
4 Assemble all four skewers and insert them into the rotisserie wheel. Place the rotisserie in the oven and cook the kebabs for 12 - 15 minutes until the chicken pieces are cooked through. Remove rotisserie from the oven and serve immediately.
