Satay Tofu Burgers - an inexpensive healthy family feed

Ingredients:
From the Asian grocery shop:
"Fortune" or similar Hard Tofu  about $2.75 a block. Lasts for a few weeks so you can have it on hand.

From the supermarket:

Fountain Satay Sauce
SW whole egg mayonnaise (yellow & blue label with blue lid -helps you find it, especially if you are having a 'boy look')
2 eggs
1 clove Garlic - fresh is best
sautéed onion    
accessories - sliced beetroot, cucumber, tomato, shredded lettuce or a nice oak leaf lettuce, & grated carrot
Bacon slices fried off - optional for the T-REX
Burger rolls or nice sliced bread or Damper rolls from Woollies
Method:
Slice the tofu into 5mm strips with sharp knife. They should look like a slices of bread. You get about 6 slices out of a block.
Whip the eggs and add mashed garlic, salt & pepper
Coat the tofu slices in the egg mix.
A non stick pan or a flat non stick sandwich press is perfect or a well oiled fry pan will suffice.
Multi task or get help
Fry the tofu till golden brown on both sides, try not to let the egg coating get stuck on pan base
Toast the buns
To Assemble:
Apply whole egg mayo to both bun pieces.
Add a dollop of Satay sauce on the base bun, then a tofu slab and bacon piece & fried onions
beetroot, tomoto, cucumber  & lettuce etc.
A dollop of satay sauce on bun lid and pop it on top.
Serve on a plate with a serviette and expect to hear some slurping and 'mmmming'

The flavoured egg coating on tofu cut into chunks is the answer if you want a stir fry of tofu & vegies in a sauce of chicken stock and soy with a little cornflour to thicken. Some garlic, ginger & a little chilli will improve things as well.
