Marinated Scallops

Shopping List

    * 6 scallops
    * I red chilli, very finely sliced or diced
    * 2 cm piece of ginger cut into very fine strips
    * zest and juice of 1 lime
    * 4 tablespoons of olive oil
    * 2 tablespoons of rice wine vinegar
    * 1 teaspoon of sugar
    * 1-2 tablespoons of coriander, finely chopped.

Cooking Instructions

1    Preheat the Salamander grill to setting 12.

2    Mix the oil, lime juice and zest, vinegar and sugar and allow the sugar to dissolve. Add the chilli and ginger. Use half of the dressing to coat the scallops and marinade for a few minutes.

3    Place the scallops on a heatproof dish under the salamander and grill for approximately 5 minutes, turning once.*

4    To serve, drizzle with the remaining sauce and sprinkle with the chopped coriander.

5    * If you do not have a salamander grill, this dish works equally well cooked in a frying pan on a medium heat.
